So I’ve been married for only two years now, which means I’ve only STARTED to cook. Before marriage I never cooked for myself. The only thing I knew how to cook was rice! Once I got married I slowly learned how to cook through trial and error. STILL to this day I am learning!
SO after explaining myself, here is my picture of my Lemon mini tart that is SLIGHTLY burnt on the edges. This one was the best looking one too! LOL. Either way it was still very YUMMY! AND ONLY 70 CALORIES!
This is perfect for pot lucks, parties, or a simple sweet desert.
I got this recipe from Pillsbury fast and healthy cookbook page 204. Takes only 15 min to prep!
Lemon Mini Tart
1 cup fat-free (skim) milk
1 box (4- serving size) lemon instant pudding and pie filling mix
1 teaspoon grated lemon peel
1 refrigerated pie crust (from 150ox box) softened as directed on box
Powdered sugar, if desired
3-inch round cutter
1- In a bowl, beat milk and pudding mix until well blended, stir in lemon peel and refrigerate.
2- Heat oven 450F. Using a rolling pin, roll pie crust to 15-inch diameter. With lightly floured 3-inch round cutter, cute 16 rounds from crust. Fit rounds into 16 (2 3/4 inch) ungreased muffin cups, pressing in gently. Bake 5-7 minutes until very light golden brown. Remove and cool
3- Spoon lemon filling into tart shells, garnish with strawberry. Sprinkle with powdered sugar.
